1. KNOW THE GRIND. Use the grind recommended in you coffeemaker’s booklet—choosing too coarse a grind might leave you with weak coffee and going too fine can produce a strong, bitter coffee.
2. SKIP THE BULK BINS. Light and air can kill the beans coffee flavor, and you may buy an old and bad batch of coffee beans. If you’re buying bagged or canned coffee, look for vacuum packs or packaging with valve vents (a small disk on the packaging), which lets carbon dioxide out and prevents air from getting in. And whole beans stay fresher longer; grind your coffee just before you brew it.
3. STORE SMART. Retain the freshness of your coffee beans by storing them in an airtight container and placing it in a cool, dark place as soon as you open the package. Forget the freezer or refrigerator. It may damage the beans and change the taste.
4. GET THE SCOOP. Measure 1 ½ to two tablespoons of ground coffee per serving. If you like your coffee stronger, adjust accordingly.
5. DON’T DELAY. Drink your coffee as soon as possible—it will start to burn if left on a warmer more than 20 minutes. Live long and prosper.
